Tatvam asi is explained in 6-8-7 ( 6 th Ch 8 th Section and 7 Th verse) Chandogya Upanishad of Samaveda.
ಸ ಯ ಏಷೋsಣಿಮೈ ತದಾತ್ಮ್ಯಮಿದಃ ಸರ್ವ ತತ್ ಸತ್ಯಃ ಸ ಆತ್ಮಾ ತತ್ವಮಸಿ – This verse further continue but for us this much is enough now. That itself is the source called Existence. The Truth, the Supreme Reality, Hence that indeed is ATMA, the self of the world, its most essence, its quintessence, its very reality, because the word, self when when not preceded by any word, conventionally denotes the innermost SELF. Hence you are that Existence. You here refers to Svetaketu to whom his father Uddalaka mentioned.
By telling to Ganapati You are Tatvamasi, conveys that The SELF, the brahman, the Atman is none other than Ganapati.
We find reference to Tatvamasi also in Verses 253 & 262 in Vivekachudamani Composed by Sri Shankara Bhagavatpadacharya.

That beyond which there is nothing; which shines even above Māyā, which again is superior to its effect, the universe; the innermost Self of all, free from differentiation; the Real Self, the Existence-Knowledge-Bliss Absolute; infinite and immutable – that Brahman art you, meditate on this in your mind.

 (that Brahman is you yourself);
